Ingrédients
200 g Dark chocolate
150 ml chickpea juice, also called aquafaba (i.e., a can of chickpeas)
Instructions
- Melt the chocolate in a bain-marie, or in the microwave in 30-second intervals, stirring with a spatula between each interval.
- Meanwhile, collect the chickpea water (drain your can and collect only the juice).
- In a mixing bowl or the bowl of your mixer, whisk the chickpea juice until stiff peaks form, like egg whites. You can add a pinch of salt to help it whip up more easily.
- Gently fold the whipped chickpea juice into the melted chocolate using a spatula.
- Leave to set in the refrigerator for 2 hours.
Astuces
- You can add sugar while the aquafaba (chickpea juice) is whipping into stiff peaks. For a delicious and crunchy touch, add chocolate chips when you mix the chocolate and the whipped aquafaba.
