If you spend any time on Instagram or TikTok, you couldn’t have missed the phenomenon: the Crookieu. Born in a Parisian bakery, this audacious marriage between a croissant and a cookie has become the Holy Grail for lovers of comforting pastries.

Ingrédients

  • 6 Croissants (you can use raw croissant dough, or plain, already baked croissants)

  • 100 g Butter

  • 75 g White sugar

  • 100 g Brown sugar

  • 3 g Salt

  • 5 g Baking powder

  • 100 g Chocolate chips

  • 200 g Flour

  • 1 Egg

Instructions

  • In the bowl of your stand mixer fitted with the paddle attachment, place the butter in pieces and the two sugars.
    If you don’t have a robot, in a mixing bowl put the softened butter (30 seconds in the microwave) with the sugar and mix with a spatula.
  • Once the sugars and butter are well mixed, add the egg and mix. Add the salt, flour, and yeast (speed 2 in the food processor, still using the paddle attachment).
  • Add the chocolate chips, mix (at speed 1 with the paddle attachment in the food processor).
  • Cut the croissants in half lengthwise, fill with cookie dough, then seal the two ends of the croissant with cookie dough.
  • Bake for 10 minutes at 180°C.

Astuces

    If you are using raw croissant dough, bake them first at 180°C for 20 minutes. If it’s a whole batch of raw croissant dough, cut it into triangles and roll them up starting from the base of the triangle to form the croissants. Then bake. For an even more indulgent treat, you can top your crookies with chocolate spread.
