Forget everything you thought you knew about vegan desserts. This vegan chocolate mousse isn’t just an alternative: it’s a culinary revelation. With just two ingredients and a magical technique, you’ll achieve a texture as firm and airy as a traditional mousse, but lighter.

Ingrédients

  • 200 g Dark chocolate

  • 150 ml chickpea juice, also called aquafaba (i.e., a can of chickpeas)

Instructions

  • Melt the chocolate in a bain-marie, or in the microwave in 30-second intervals, stirring with a spatula between each interval.
  • Meanwhile, collect the chickpea water (drain your can and collect only the juice).
  • In a mixing bowl or the bowl of your mixer, whisk the chickpea juice until stiff peaks form, like egg whites. You can add a pinch of salt to help it whip up more easily.
  • Gently fold the whipped chickpea juice into the melted chocolate using a spatula.
  • Leave to set in the refrigerator for 2 hours.

Astuces

    You can add sugar while the aquafaba (chickpea juice) is whipping into stiff peaks. For a delicious and crunchy touch, add chocolate chips when you mix the chocolate and the whipped aquafaba.
