200 g 7 oz Dark baking chocolate
6 6 Eggs
Preparation
- In a large bowl, melt the chocolate in the microwave or in a double boiler.
- Meanwhile, separate the egg whites from the yolks. Then whisk the egg whites until stiff peaks form.
- Once the chocolate has melted, add the egg yolks all at once, then incorporate them with a spatula.
- Add the beaten egg whites in three batches, taking care to mix gently with a spatula so as not to break the whites.
- Simply pour into the container of your choice (individual or salad bowl).
- Refrigerate for 2 hours, and enjoy!
Astuces
- Do not incorporate the yolks with chocolate that is too hot, to avoid cooking the yolks. Use very fresh eggs, and your egg whites will whip up even better. You can add a pinch of salt to your egg whites to help them whip up better. For an even more chocolatey mousse, use 70% chocolate.
