Nothing beats the indulgence of a rich chocolate flan. Forget store-bought flans: with just a few basic ingredients and a simplified technique, I’ll show you how to achieve a perfect texture, dense yet melt-in-your-mouth.

Ingrédients

  • 1,5 Liter Whole milk

  • 350 g Sugar

  • 150 g cornstarch

  • 5 Eggs

  • 1 tablespoon Chocolate powder

  • 1 Puff pastry

Instructions

  • Prepare puff pastry in the mold of your choice; any shape is possible. You will need puff pastry on the bottom of your mold and all around the sides, making sure to seal the base to the sides. Then, prick the pastry with a fork to prevent it from puffing up too much.
  • In a large saucepan, pour the milk, half the sugar, and the cocoa powder. Bring the mixture to a boil, stirring regularly to ensure the sugar dissolves completely.
  • In a large bowl, crack the whole eggs and add the remaining sugar. Whisk together. Then, whisk in the cornstarch until the mixture is smooth.
  • Once the milk-sugar mixture is boiling, pour it over your egg-sugar-cornflour mixture, and whisk directly.
  • Transfer the mixture to your saucepan and return to low heat, stirring constantly. As soon as it comes to a boil, remove the vanilla pod. Then transfer it to the prepared mold lined with puff pastry.
  • Bake for 1 hour at 170°C.
  • Allow to cool in a cool place.

Astuces

    Cocoa powder, or a low-sugar cocoa like Van Houten, will be perfect for a subtle yet powerful flavor. Once out of the oven, your flan will still be slightly wobbly; after chilling, it will be set but just as melt-in-your-mouth. For a crispy-yet-melty texture, feel free to add chocolate chips before baking!
