Vanilla flan reigns supreme in bakery windows, but it’s also one of the easiest desserts to make at home. Here’s my favorite version: a generous custard, plenty of vanilla beans, and above all, an ultra-fast method.

Ingrédients

  • 1,5 Liter Whole milk

  • 350 g Sugar

  • 150 g cornstarch

  • 5 Eggs

  • 1 Vanilla pod

  • 1 Puff pastry

Instructions

  • Prepare puff pastry in the mold of your choice; any shape is possible. You will need puff pastry on the bottom of your mold and all around the sides, making sure to seal the base to the sides. Then prick the pastry with a fork.
  • In a large saucepan, pour the milk and half the sugar along with the vanilla pod split in 2. Boil the mixture, stirring regularly so that the sugar dissolves completely.
  • In a large bowl, crack the whole eggs and add the remaining sugar. Whisk together. Then, whisk in the cornstarch until the mixture is smooth.
  • Once the milk-sugar mixture is boiling, pour it over your egg-sugar-cornflour mixture, and whisk directly.
  • Transfer the mixture to your saucepan and return to low heat, stirring constantly. As soon as it comes to a boil, remove the vanilla pod. Then transfer it to the prepared mold lined with puff pastry.
  • Bake for 1 hour at 170°C.
  • Allow to cool in a cool place.

Astuces

    ★ No vanilla bean, replace with liquid vanilla. ★ The flan will still be slightly wobbly when it comes out of the oven; after chilling, it will be perfect. It can also be eaten warm—it’s delicious! â˜
