  • 59 g Sugar

  • 2 g Salt

  • 165 g Flour

  • 4 Eggs

  • 25 g Butter

  • 80 g Beer

  • 80 g Cream

  • 250 mL Milk

  • In a bowl, crack the eggs, whisk together the flour, salt and sugar until a ball forms. Incorporate the melted butter.
  • Pour in a little milk and whisk. Gradually add more milk while whisking.
  • Add the beer and cream, mix, add the lemon and orange zest to taste.
  • In a buttered and very hot crepe pan (or frying pan), then place over medium heat, pour a ladleful of batter, then tilt the pan so that the batter spreads everywhere.
  • Using a spatula, flip your crepe as soon as the edges are cooked. Finish cooking for 1 minute.
