  • 5 Eggs

  • 250 g Flour

  • 50 g Sugar

  • 500 mL Milk

  • 1 spoon Liquid vanilla

Instructions

  • In a bowl, crack the eggs, whisk together with the flour and sugar until a ball forms.
  • Pour in a little milk and whisk. Gradually add more milk while whisking.
  • Once your batter is completely liquid, add the vanilla.
  • In a buttered and very hot crepe pan (or frying pan), then place over medium heat, pour a ladleful of batter, then tilt the pan so that the batter spreads everywhere.
  • Using a spatula, flip your crepe as soon as the edges are cooked. Finish cooking for 1 minute.
  • Enjoy! Eat them plain, or top with jam, sugar, spread… The choice is yours, but they’re delicious on their own!

Astuces

    Add the milk almost drop by drop, whisking constantly to avoid lumps. If there are lumps, blend the mixture. A crepe pan is the most suitable pan, but you can make crepes in any pan. If the pan is sticking, put butter on a paper towel and spread it on the pan between each crepe; a thin layer is enough.

How to make simple and quick pancakes

Yes! To avoid resting the dough, use lukewarm milk (around 35°C). This allows the flour to hydrate instantly. Also, blend the dough in a blender for 1 minute: the centrifugal force mechanically relaxes the gluten, thus replacing the resting time.

All you need is flour, eggs, milk, and a pinch of salt . For an extremely simple version, use 1 cup of flour, 1 cup of milk, and 1 egg. This is the golden rule for never forgetting the recipe, even without scales.

Use a good quality non-stick pan. Oil it only once at the beginning with a damp paper towel. The secret to speed is to cook over high heat : 45 seconds on the first side and 20 seconds on the second is enough.
