The pistachio cake is a soft and delicately flavored cake, recognizable by its natural green color. Sweet and slightly indulgent, it can be enjoyed as an afternoon snack or dessert, plain or with a light glaze.

Ingrédients

  • 4 Eggs

  • 280 g Sugar

  • 100 g 30% heavy cream

  • 80 g Butter

  • 220 g Flour

  • 70 g Pistachio paste

  • 6 g Baking powder

Instructions

  • In a large bowl, lightly beat the eggs and sugar together.
  • Add the flour and baking powder, whisk. Then add the pistachio paste.
  • Add the melted butter and the cream. Then whisk again.
  • Pour into a cake tin that has been previously sifted (lightly butter and flour the dish) or into a suitable silicone dish.
  • Bake for 45 minutes at 165°C.

Astuces

    For an even more indulgent treat, you can add whole pistachios to the batter and sprinkle them on top before baking. For an even more moist cake, make a thin line of butter in the middle of your cake before baking; it will also rise better.
